30 Minute Meal- Easy Enchiladas

I have really been in the mood for mexican food lately but am so sick of going out to eat! I decided that I would attempt my Aunt Fran's Enchilada recipe because it is quick and easy. Also because it's great as a leftover (for lunch at work)!
 
 
 
 
Aunt Fran's Cheesy Beef Enchiladas

Ingredients:
 
2 bags of Shredded Cheese (I used 1 Mexican Blend and 1 cheddar)
1 small container of Sour Cream (8 oz)
1 Large can of Enchilada Sauce
1 package of tortillas (of your Choice)
1 lb of Ground Beef
 
Optional:
Shredded Lettuce
Tomato
Onion
 
Directions:
 
First Pre-heat the oven to 350.
 
Then, cook your beef over medium heat until brown and drain.
After cooking your meat, place in a large bowl and combine with one bag of cheese and sour cream. Also add about 1/4 cup of enchilada sauce to the mixture and stir well.
 
Take this mixture and place about a half cup in a tortilla. Fold and repeat. Lay each tortilla next to each other slightly overlapping. Next, sprinkle 1 bag of cheese evenly over layered tortillas and pour the rest of the can of enchilada sauce over the tortillas.
 
Place in over for 15-20 minutes.
 
While this is baking, chop up desired vegetables to sprinkle over the enchiladas. I personally like lettuce and tomato.

Fall is in the air (and so is love)

Fall is in the air:


I don't know what it is, but I am anticipating fall more than ever before. It has been in the seventies the past few days and all I want to do is pin cute fall outfits (on Pinterest) while sipping coffee and eating pumpkin pie. It was just yesterday that I discovered Cinnamon Swirl Body Smoothies from Ulta. It is a three-in-one body wash, shampoo, and bubble bath and on sale for $6 at Ulta. It's like being able to enjoy the comfort foods of fall without the calories. It is spicy and sweet and I am crazy about it!


Pictured above would be my new favorite body wash and an idea of what all my "style" pins are about to look like.

Love is in the air:

As most of you know I am getting married in about 5 weeks now! I can't believe how quickly it is approaching and all of the prep work that must still go into it! One of the most important parts of preparing for marriage is counseling. We just had our second counseling session and are learning a lot, so I thought I'd share. The scripture we looked at during our first session was in Ephesians...

Husbands, love your wives, as Christ loved the church and gave himself up for her, that he might sanctify her, having cleansed her by the washing of water with the word, so that he might present the church to himself in splendor, without spot or wrinkle or any such thing, that she might be holy and without blemish. In the same way husbands should love their wives as their own bodies. He who loves his wife loves himself. For no one ever hated his own flesh, but nourishes and cherishes it, just as Christ does the church, because we are members of his body. “Therefore a man shall leave his father and mother and hold fast to his wife, and the two shall become one flesh.” This mystery is profound, and I am saying that it refers to Christ and the church. However, let each one of you love his wife as himself, and let the wife see that she respects her husband. (Ephesians 5:25-33 ESV)

Pastor Drew explained what he thinks this passage really means for us and I will share it with you. Basically husbands are supposed to love their wives. This means sacrifice and do what is best for her. Show her through your daily actions that you love her (not just by words) and will do anything in your power to show her this love and encourage her in God's word.  As for the wives, you should submit to your husbands. This means that you should trust and, ultimately, respect your husband. It also means that you should should show love in your attitude and life. It means that you should pray for one another and encourage each other. If either roles do not carry out their role a relationship will suffer. If a husband does not make decisions that are best for his wife and love her daily through his actions his wife will not want to submit. If a wife does not submit and does not honor the decisions of her husband it will be hard for her husband to love. It must be a continual cycle for a marriage to really be what God intended!

World's Easiest Chicken Recipe

Okay, so since I have started this blog I have had every intention on posting recipes and meal plans. The idea of posting meal plans right now is overwhelming and kind of a rediculous idea for someone with such an unpredictable schedule. I have decided I will try to share anything that I make that is super delicious or out of the ordinary. Last week I decided that I wanted to make chicken for dinner. I looked up a bunch of recipes and decided that I did not feel like buying so many ingredients so I would just work with what I have. My grandma had mentioned, earlier that day, that cornflakes are great on chicken. I didn't have cornflakes but I did have crackers!

Above is a picture similar to what I made.

All you need to make this Cracker Coated Chicken:

5 Boneless skinless chicken breasts
4 Eggs
1 package of crunched up Ritz crackers

First, I crunched up one package of crackers (using the bottom of a measuring cup). Then I coated the chicken with the whisked-up egg. Finally, I dipped the coated chicken into the crunched up crackers and baked in oven at 325 for 20 minutes.


This is such a quick and easy recipe! Give it a try!

Simple Summer Dessert

When I created this blog I planned on making posts about foods, desserts, and crafts I did often. BUT of course most things do not go as planned and that failed! Finally last week I happened to make a dessert for work. I LOVED it and thought it was the perfect quick summer dessert and decided to share it with you all.

Wedding Preview

A lot has happened since my last post, I have actually set a date for the wedding! It will be this September and I am so very excited about it. My originally plan was very classy and sophisticated but....thanks Pinterest it has convinced me to go a totally different route. I am now going for a vintage theme. Very laid back, stylish and me. I wanted to break down the theme for those interested! So here it goes...

I love how relaxed and elegant this mismatched look is.



After seeing this picture I automatically thought, okay, barn wedding. I looked into barns and realized that it was not a reasonable idea for me. BUT I am still bringing the relaxed, rustic, and stylish look to my venue.


The Table Decor will look something like this with flowers in jars as well.



And there will be chalkboards all over (hopefully)

Meditate.

Today I have, once again, been reminded that my thought life has been too busy with the wrong thoughts. It has been focused on what I don't have, things I want, events I wish would take place, ect. I have been consumed with myself and havent focused on God's word. I literally have been seeing amazing events happen in other people's lives and said "why cant this happen to me?!" my thought life has been drowning in everything revolving around myself. Finally, I was reflecting back on college days today when I was reminded of Biblical meditations. In one of my "core" classes we talked about meditation and scripture. We were told to take a piece of God's Word and really think on the words. Take time to digest what it is saying. So, that's what I decided to do. I figured my thought life could use more of God and less of ME! Here's the verse I grabbed:

Zephaniah 3:17
"The Lord your God is in your midst, a mighty one who will save He will rejoice over you with gladness. He will quiet you by His love. He will Exult over you with loud singing.

*exult- be very happy

This verse spoke wonders to me and is still continuing to do so as I type this entry. For weeks I have been comparing myself with others and telling myself I have nothing to say on my blog. I felt as if I have nothing to share. I have no new fitness ideas today, I havent baked much....but you know what?! God wanted to share with me that He is in my midst today. He rejoices over me and still has things to teach me today. Not only does He rejoice over me, but He wants to have me be quiet for a minute. He is here and has things to show me. I need to make time not only in my daily actions but in my thought life for meditation on Him and his words.


My encouragement to you, if there is a you out there that is reading this :), is to look up a verse and focus on it and see what God may be trying to show you. It's as easy as going to http://www.google.com/ and typing in verse about God's Love or whatever you want to focus on today.

a little fitness update and upcoming menu ideas

It's been awhile, I've been trying to think of very structured posts to write. I've seen blogs with themed days: recipe days, crafts, DIY home decor ect, but I'm just not that organized yet! I'm still working on understanding how to upload pictures and add text, make lists printable, and so on, so please bear with me! I will be learning these things. Regardless of my lack of ability thus far, today, I have decided to post anyways.

Working on my fitness:

 I wanted to touch a little on what's been going on in the fitness aspect of my life. LUNGES. This little number (shown below) has the potential to change the shape of your rear and is a lot more effective than I ever imagined.


 LUNGES. These have become a part of my workout routine thanks to Diana! Diana leads a ladies workout class at church and has been making these a part of class. I used to think they were too easy and didnt do much. They seemed too basic to me, but honestly, do about 100 of these today and see if you think they are basic tomorrow. These are no joke! I have added them to my fitness routine and am seeing results. try them.

 MENUS:

I am earnestly trying to become a blogger that posts weekly menus. I think it is fun and inspiring to others. I want desperatley for this to be part of my blog, but I need to start planning ahead. I am not very good at this so its going to be tricky. There are some wonderful blogs that have inspired me to try this. One of which is lovely snippets. So look out for some menu plans and recipes from this lady (me). It will be happening real soon!!

Fab Ab February
